Happy Thanksgiving

Happy Thanksgiving everyone!  I hope yours turned out as well as ours did.  I could not have asked for a better turkey.  Turned out perfectly.  And ahead of schedule, unlike the previous two years.  I think the key was 1. fresh turkey 2. let it set out two hours prior to oven 3. didn't jam a bunch of stuff in the cavity.  The night before I prepared a brining solution that Dar and I get from Williams Sonoma and let the turkey sit in that overnight.  I pulled the turkey out of the brine at 6:00a.m. and let it rest on a rack for two hours at room temp.  We put some onion, apple, cinnamon sticks, rosemary inside and threw it in the oven at 450 for 45 minutes then 350 for three hours.  The only other thing I did was brush olive oil over the bird right before putting it in the oven.

My parents, both grandmothers, and my kid sister came down, as well as Dar's parents.  We had quite a spread.  It was a wonderful time catching up with everyone.  I really enjoyed having everyone gathered around the table and laughing and carrying on.

I wanted to pause and give thanks for all of the things that I am fortunate enough to have in my life.  Some days it is difficult to not sweat the small stuff and need to keep that in mind.
